Last week, I saw a picture of myself at a friends baby shower, and didn’t like it. I realized right then that I wanted to kick start my weight loss with a low carb diet. Eating low carb has always been easy for me. Any diet where you can eat all the cheese, lean meats and even bacon and still lose weight – I’m in!
Chili is by far one of my favorite comfort foods. Over the years I have made countless Chili recipes. Sometimes I use ground turkey, beans and even bacon. I like to mix up the recipes and decide what my favorites are.
This low carb and gluten free Chili recipe has just the right amount of flavors, texture and heat to satisfy your Chili craving.
My husband even said this was his favorite Chili recipe I’ve ever made. He loves beans in his Chili, so for him to love this bean-free version made me so happy!
Add your favorite low carb toppings like green onions, sour cream, avocado, bacon crumbles, jalapeños and of course…CHEESE!
Depending on your preference, you can make it as mild or spicy as you like. I added 2 tablespoons of crushed red pepper to kick the spice up to a 7/10 heat scale. But that’s just me. You can keep the flavors mild by omitting the crushed red pepper flakes. The mixture of the lean ground beef, tomatoes, celery and the variety of seasonings simmering together in the Crockpot make this a great low carb recipe!

- 2 lbs lean ground beef
- 1 medium yellow onion, chopped
- 3 tbsp minced garlic
- 1 1/2 cups celery, diced
- 1 cup beef broth,
- 14.5 oz can crushed tomatoes
- 14.5 oz can diced tomatoes with green chilies
- 6 oz tomato paste
- 3 tbsp chili powder
- 2 tbsp ground cumin
- 2 tbsp crushed red pepper flakes (if you want spicy chili)
- 1 tsp garlic powder
- 1 tsp italian seasoning
- 1 tsp salt
- 1 tsp ground black pepper
- In a large pan over med-high heat, cook ground beef until browned. Drain grease. Add minced garlic and saute for 1 minute.
- Add beef to slow cooker. Add chopped onions, celery, beef broth, diced tomatoes, crushed tomatoes, tomato paste, chili powder, cumin, crushed red pepper flakes (optional), garlic powder, Italian seasoning, salt and pepper.
- Stir all ingredients together. Cook on Low for 6 hours or High for 3 hours.
