Cheesy Cauliflower Bacon Gratin is a low carb, fail-proof dish that will surely please a crowd. It is baked in a cheesy cream sauce smothered in grated cheddar and fresh parsley garnish.
If your looking for a low carb alternative to mashed potatoes, you’ve come to the right place. This cheesy cauliflower bacon gratin is the perfect side dish to compliment any meal. The recipe can easily be doubled to accommodate more people.
Did I mention, it is super easy to make? You whisk the cheese sauce ingredients together then pour it over the cauliflower florets and pop it in the oven. From start to finish, it will only take 40 minutes before your eating.
I tend to make this as a side dish along with a simple salad and toasted bread. If you have a family member that isn’t too keen on cauliflower, you can half it with broccoli florets. Also, depending on what you have on hand, top it with green onions, fresh parsley, chives or micro greens.
