Easy Gluten Free Trail Mix Cookies with peanut butter using Simple Mills Chocolate Chip Cookie Mix.

The Simple Mills Gluten Free Trail Mix Cookies are some of my favorite treats to pick up on a trip to Whole Foods. They have very clean ingredients and taste great. On a recent trip to Whole Foods I picked up a box of their Almond Flour Cookie Mix and it came to the rescue for a lazy Sunday afternoon treat. A great way to enhance any pre-made mix is by adding in some of your favorite ingredients. In this case adding Trail Mix with cranberries, walnuts, almond and raisins really added great texture to the cookies. I also added peanut butter for moisture because almond flour can sometime be a little dry and of course extra chocolate chips because DUH!
These Gluten Free Trail Mix Cookies were easy, fast and delicious. Not every recipe has to be complicated or detailed, using pre-made mix is a great way to save time. This is also a great way for someone who is just learning how to bake to experiment in the kitchen. Getting creative in the kitchen is half the fun so the on you next trip to the store I highly suggest you pick up a box of Simple Mills Almond Cookie Mix.
Gluten Free Almond Flour Cookies ingredients
How to make the almond flour cookies, you will need these ingredients:
- One egg
- Two tsp vanilla
- Three tbsp butter
- One half cup dried cranberries, walnuts, raisins, chocolate chips
- Two tbsp peanut butter for moisture

- 2 tsp vanilla
- 3 tbsp butter
- 1/2 cup dried cranberries/walnuts/chocolate chip, raisinss This is an extra addition I added
- 2 tbsp peanut butter This is an extra as well to give it a moist texture
- Preheat oven to 350F.
- Mix an egg, vanilla, and butter together in a bowl.
- Add the the simple mills brand almond flour and stir until dough comes together.
- Make one rounded Tbsp of cookie dough mix onto ungreased cookie sheet.
- Press down rounded dough to flatten.
- Bake for 10-12 or until cookies are slightly browned. Then let them cool down and ready to eat!
