I remember having Pierogi with a spicy red sauce at a restaurant a few years ago. It was so tasty that I set out on a mission to find a way to recreate those flavors again. So, I picked up a few boxes of frozen Pierogi at the grocery store and started experimenting!
The pork chorizo mixed with simple tomato sauce and a touch of garlic, has so much flavor. You can also use ground Italian sausage, if desired.
Some folks don’t mind a runny sauce with Pierogi, but I’m not one of them. I wanted every bite of the potato stuffed pierogi topped with the chunky, spicy sauce. Oh, that’s another thing – I add crushed red pepper flakes to nearly everything! This recipe was no exception. My husband and I love some heat to our pasta sauces, and a few pinches of crushed red pepper brought this flavor to a whole new level. If you like spicy food, I highly recommend it!

This no-fuss Potato and Onion Pierogi with Homemade Meat Sauce is an easy weeknight meal that is ready in just 25 minutes using just 5 ingredients.

- Add Pierogi to 6 cups of boiling, lightly salted water. Boil according to package instructions. Drain; Cover to keep warm.
- In a medium skillet over med-high heat, cook sausage until brown while breaking up the meat. Drain off any excess fat. Add half of the halved tomatoes, tomato sauce and garlic powder to the sauce. Cook for 5-7 minutes.
- Divide pierogi onto two plates. Smother pierogi with desired amount of tomato sauce mixture. Top with the remaining tomatoes. Serve immediately.
- Chorizo is hard to tell when it is browned, so be sure to cook for at least 6-7 minutes.
- For spicier flavor, add a desired amount of crushed red pepper flakes to the simmering sauce.
