Even though I’ve been trying to eat more low carb meals this week, this was a special request from my husband. He phoned it in mid-day with a “pretty please.” Of course I agreed, because I could still eat the pork chops with a side of veggies! It was so incredibly hard to not cave in and eat the rice though, you have no idea. It smelled so dang good!
This recipe is not only easy to throw together, it’s a classic rice and protein combination. The rice compliments the pork chops perfectly. If you haven’t realized, I add crushed red pepper flakes to most of my main dishes to give off some heat. I love spice! The cream of mushroom soup and onions add creaminess and a touch of sweetness to the rice pilaf.

This One Pan Pork Chops and Rice recipe needs only 5 ingredients. Its quick to prepare and completely satisfying for everyone.

- 4 pork chops, bone-in (or 6 boneless chops)
- 1 cup uncooked long grain rice, brown or white
- 1 (10 3/4 oz) cream of mushroom soup
- 1 1/2 cups water
- 1/4 onion, chopped
- 1/4 tsp black pepper (optional)
- 1 tsp crushed red pepper flakes (optional)
- Preheat oven to 350 degrees.
- Whisk together the cream of mushroom soup, water, rice with 1/4 teaspoons pepper.
- Spread rice mixture into a 11x13 in casserole dish. Sprinkle the chopped onions and crushed red pepper flakes (optional) on top of the rice.
- Salt and pepper both sides of the pork chops and place on top of rice.
- Cover with foil and bake for 1 hr and 15 minutes or until meat is cooked through.
- Remove from oven and fluff the rice surrounding the pork chops with a fork and let rest for 5 minutes. Then enjoy!
