- 2 Cans Coconut milk whole, unsweetned
- 1 Cup Chia seeds
- 1/4 Cup Cacao Powder
- 1/4 Cup Hemp seeds
- 1 Tablespoon ground cinnamon
- 1/2 Teaspoon salt
- 1/3 Cup Maple syrup
- 1 Tablespoon vanilla extract
- 1 Cup Coconut yogurt/ Greek yogurt
- 1/4 Cup Raw almonds, chopped
- 1 Tablespoon Cacao nibs
- 1/4 Cup Blueberries
- 1/4 Cup Raspberries
- Handful Fresh mint, minced
- We'll begin by gathering our ingredients and washing the berries and mint. While those dry, chop the almonds and mince mint leaves.
- Snatch your favorite medium-size bowl and pour in coconut milk, mixing thoroughly to dissolve any clumps, then add chia seeds.
- Incorporate the cacao powder, hemp seeds, cinnamon, and salt stopping to mix after every ingredient.
- Now it's time to sweeten things up! Mix in maple syrup and vanilla extract.
- Pour into cute mason jars, filling about 3/4 of the way, leaving room for the toppings. Refrigerate for 3 hours allowing pudding to thicken.
- Top with yogurt, mixed berries, almonds, cacao nibs, and mint leaves. Last but not least, enjoy your delectable cacao chia pudding and share with your loved ones!
Forgo the jars and serve in a medium-sized container. Follow chilling instructions and add toppings. This is perfect when serving at an event or if you don't have individual serving size containers.
