I’ve been craving desserts lately. Sometimes I don’t have the patience to make a pie crust from scratch or the energy to mix together cookie dough.
After browsing through the grocery store deli, I spotted ambrosia salad. I remembered how delicious the various fruits and cool whip were together. During the holidays, someone would always bring an extra large bowl of this wonderful dessert. That got me thinking. These kinds of salads are super easy to make and last in the fridge for days. It was time to put together my own recipe.
Pistachio is one of my favorite flavors of ice cream. So naturally, I was going to use Pistachio instant pudding for my fruit salad.
Once you stir together the DRY pudding mix into the crushed pineapple, its time to add in the remaining ingredients.
Next, add in the chunk pineapple, fruit cocktail, mandarin oranges and Cool Whip. Wa La…you have yourself a Five Minute Fruit Salad!
You can make this fruit salad ahead of time to let the flavors blend, but it can be made and used immediately if unexpected guests arrive. Doubles or triples well if you need large quantities.

- 1 20 oz can crushed pineapple, including juice
- 1 pkg Instant Pudding Pistachio, Vanilla or Lemon
- 1 20 oz can chunk pineapple
- 1 can fruit cocktail
- 1 10 oz. can Mandarin oranges
- 1 tub Cool Whip
- In a large bowl, stir DRY pudding mix into crushed pineapple and allow to set while draining rest of fruit. Drain these fruits well and stir into pudding-pineapple mixture together with the Cool Whip.
- Serve immediately, or let chill in refrigerator until your ready.
