Cacao Chia Pudding

Like many women, I began suffering from hormone imbalances in the later half of my twenties. To my disarray, many healthcare professionals offered little to no answers. Prepared to do something about it, I dived into books and podcasts. Along my hormone healing journey, I found the incredible Dr. Mindy Pelz and her book “Fast Like a Girl: A Women’s Guide to Using the Healing Power of Fasting to Burn Fat, Boost Energy, and Balance Hormones” . This cacao chia pudding, inspired by her work, is a nutritious and delicious treat that can be enjoyed for breakfast, dessert, or as a satisfying snack… but don’t worry the men in your life will enjoy it just the same!

Cacao chia pudding is easy to prepare and packs abundant health benefits. Cacao, considered a plant-based super food, is a good source of copper and antioxidant flavonoids, which help your body get rid of everyday toxins. The hemp seeds provide magnesium, protein, and Omega-3 fatty acids. Blueberries are loaded with antioxidants, which may protect against heart disease, diabetes, cancers, and cognitive decline. Raspberries are bursting with potassium, essential to heart function and blood pressure regulation. Coconut milk is rich in vitamins, minerals, healthy fats, and electrolytes that aid with digestive health and immune support. The remaining ingredients are also brimming with health benefits!

Ingredients
Cacao Chia Pudding
  • 2 Cans Coconut milk whole, unsweetned
  • 1 Cup Chia seeds
  • 1/4 Cup Cacao Powder
  • 1/4 Cup Hemp seeds
  • 1 Tablespoon ground cinnamon
  • 1/2 Teaspoon salt
  • 1/3 Cup Maple syrup
  • 1 Tablespoon vanilla extract
Topping
  • 1 Cup Coconut yogurt/ Greek yogurt
  • 1/4 Cup Raw almonds, chopped
  • 1 Tablespoon Cacao nibs
  • 1/4 Cup Blueberries
  • 1/4 Cup Raspberries
  • Handful Fresh mint, minced
Servings: 8 oz jars
Instructions
  1. We'll begin by gathering our ingredients and washing the berries and mint. While those dry, chop the almonds and mince mint leaves.
  2. Snatch your favorite medium-size bowl and pour in coconut milk, mixing thoroughly to dissolve any clumps, then add chia seeds.
  3. Incorporate the cacao powder, hemp seeds, cinnamon, and salt stopping to mix after every ingredient.
  4. Now it's time to sweeten things up! Mix in maple syrup and vanilla extract.
  5. Pour into cute mason jars, filling about 3/4 of the way, leaving room for the toppings. Refrigerate for 3 hours allowing pudding to thicken.
  6. Top with yogurt, mixed berries, almonds, cacao nibs, and mint leaves. Last but not least, enjoy your delectable cacao chia pudding and share with your loved ones!
Recipe Notes

Forgo the jars and serve in a medium-sized container. Follow chilling instructions and add toppings. This is perfect when serving at an event or if you don't have individual serving size containers.
