One Pot Cheesy Chili Mac

This hearty 30 minute One Pot Cheesy Chili Mac combines two of my favorites, chili with macaroni and cheese! It makes for a perfect weeknight dinner and easy clean up! 

One Pot Cheesy Chili Mac

I’m a HUGE fan of one pot meals. It makes cooking dinner less of a hassle. Everything is done in ONE single pot. That also means you only have one pot to clean. I love using my red Crockpot dutch oven for every one pot meal I prepare. Its heavy and big enough to hold stew or even a small whole chicken.

One Pot Cheesy Chili Mac

After we moved into our new house rental, we quickly started to miss our dishwasher. This house does not have one. Doing dishes a couple times a day, is not my cup of tea. So the fact that this one pot meal is a quick clean up and only takes 30 minutes was a WIN! It’s the same thing with a Slow Cooker. All the ingredients go into one pot. Perfect! 

This one pot cheesy chili mac was delicious! It was nice and cheesy, with just the right amount of beans and seasonings.  Both my husband and I had it for leftovers over the next two days.  It was still tasty! It’s definitely filling, but will not make you feel too full to function. It is a perfect recipe to make any night of the week or for guests!

I paired it with a green salad. My husband loves to eat pasta with garlic bread. You don’t need to have a side either, this dish will likely be enough.

Ingredients
  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 3 tbsp minced garlic
  • 2 14.5 oz cans diced tomateos, undrained
  • 1 14.5 oz can chili beans, undrained in chili sauce
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1 1/2 cups elbow macaroni
  • 1 tbs crushed red pepper
  • 1 tsp garlic powder
  • 1 cup milik
  • 1/2 cup beef broth,
  • 2 cups shredded sharp cheddar cheese
  • salt and ground black pepper to taste

Instructions
  1. In a large crockpot dutch oven or heavy pot, cook lean ground beef and the onion until ground beef is cooked through and onion is soft and translucent. Add minced garlic and cook for 1 more minute.
  2. Add diced tomatoes, chili beans, chili powder, cumin, crushed red pepper, garlic powder, milk, beef broth and salt & pepper. Mix together and bring to a boil.
  3. Add pasta and boil 13-15 minutes until pasta is cooked through. Stir every few minutes.
  4. After pasta is cooked through, add shredded sharp cheddar cheese and mix throughly. Turn off heat and serve immediately. Garnish with sliced green onions and extra shredded cheese.

    When do you add the cheese I’m not seeing that in the directions

      You add it as soon as the pasta is cooked through in Step 4, to blend everything together 🙂

    The ingredients call for crushed red pepper, garlic powder, milk, and beef broth, but they are not included in the instructions. Are they supposed to be in this recipe? Thanks!

      Hi Susie – Yes, they are mixed in when the other ingredients are folded in. I’ve updated the instructions. Thank you for letting me know! 🙂
