Antipasto Pinwheel Salad

An easy, low carb Antipasto Pinwheel Salad with simple red wine vinegar and olive oil dressing for a fast no-cook meal, that is ready in minutes! 

Antipasto Salad

I was inspired to make this Antipasto salad from a local deli. It is hands-down the BEST tasting Antipasto salad I had ever had. I decided to swing by one day and ask them what their ingredients were – especially the meats. Surprisingly, the exact salami they used was something I was not able to find at any grocery store. However, with a little creativity I was able to recreate this flavorful salad for a quick and healthy weeknight dinner.

It’s quite a simple low carb salad to make. I use genoa salami, black forest ham and provolone to make the meat pinwheels. On a bed of romaine lettuce, you then add diced Roma tomatoes, artichoke hearts, black and green olives and finally peperoncini’s. It gets drizzled with a mixture of red wine vinegar and olive oil to bring it all together. 

Antipasto Salad

The choice of meats can easily be adjusted to your preference. You can opt to use prosecution, pepperoni, hard salami. To make this salad dairy-free, ditch the provolone. I try to use uncured meats whenever possible. They are a little more expensive, but the health benefits are worth it to me. For the artichokes, I just buy the canned ones. Be sure the artichokes you buy are not in marinated oil.

Ingredients
  • 2 heads romaine lettuce, chopped
  • 3 Roma tomatoes, diced
  • 6 slices Genoa salami
  • 8 slices black forest ham or deli ham
  • 4 slices provolone cheese
  • 1 cup sliced black olives
  • 1 cup manzanilla olives
  • 8 oz quartered artichoke hearts
  • 6-8 Peperoncini
  • 2 tbsp red wine vinegar
  • 2 tbsp extra virgin olive oil
Servings: people
Instructions
  1. Divide all ingredients among two big salad bowls. Mix red wine vinegar and olive oil in small bowl and drizzle both salads with an even amount of the dressing.
  2. To make the pinwheels: Lay 2 slices of ham down (horizontally), partially overlapping each other. Lay 2 slices of Provolone on top, again partially overlapping. Then lay 3 slices of salami on top, partially overlapping. Finally lay 2 more slices of ham on top, partially overlapping. Start rolling tightly from the short end to form a thick roll. Cut into 1-inch pieces and add to salad.
