Salad Prep
  1. Prep arugula and radicchio.
  2. Preheat Oven to 400 Degrees.
  3. Peel and cut sweet potatoes into cubes. Strain and wash canned chickpeas.
  4. Place parchment paper on baking sheet and place chickpeas and sweet potatoes on baking sheet. Season with garlic and onion powder and salt and pepper. Once oven is preheated bake in the oven for 25 minutes.
  5. Peel and slice blood oranges.
  6. Cut goat cheese.
  7. Layer salad together ingredients together. Sprinkle pistachios and pomegranates on top. Place goat cheese on last.
Honey Citrus Vinaigrette
  1. In a mason jar with a lid juice two blood oranges and add in olive oil. Add in mustard and added spices. Cover the jar with a lid and shake until your emulsified.
  2. Serve on the side or light pour over salad and toss.
